- 1 bottle (12 oz) Guinness beer
- 3 medium carrots, diced
- 2 medium onions, chopped
- 2 large potatoes, diced

- 4 sprigs fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the beef cubes with salt and pepper then sear until browned on all sides. Remove beef and set aside.
- In the same pot, add onions and garlic; sauté until translucent.
- Return beef to the pot; add carrots, potatoes, Guinness beer, and enough beef broth to cover the ingredients. Stir to combine.
- Add thyme sprigs along with additional salt and pepper. Bring to a gentle boil then reduce heat to low.
- Cover and let simmer for 2-3 hours until the beef is tender.
