  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 bottle (12 oz) Guinness beer
  • 3 medium carrots, diced
  • 2 medium onions, chopped
  • 2 large potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 4 sprigs fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the beef cubes with salt and pepper then sear until browned on all sides. Remove beef and set aside.
  2. In the same pot, add onions and garlic; sauté until translucent.
  3. Return beef to the pot; add carrots, potatoes, Guinness beer, and enough beef broth to cover the ingredients. Stir to combine.
  4. Add thyme sprigs along with additional salt and pepper. Bring to a gentle boil then reduce heat to low.
  5. Cover and let simmer for 2-3 hours until the beef is tender.
  6. Taste for seasoning adjustments before serving.
