  • 1 cup glutinous rice flour
  • 1/2 cup cornstarch
  • 3/4 cup sugar (brown sugar preferred)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup coconut milk
  • 1 cup ripe mango puree (from about 2 medium mangoes)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Peel and dice the mangoes, then blend them until smooth to make the puree.
  3. In a large bowl, combine glutinous rice flour, cornstarch, sugar, baking powder, and salt. Mix well.
  4. Add the coconut milk and mango puree to the dry ingredients and mix until well combined into a smooth dough.
  5. Scoop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them two inches apart.
  6. Bake for 10-12 minutes or until lightly golden around the edges. Cool on a wire rack before serving.
