- 1 cup glutinous rice flour
- 1/2 cup cornstarch
- 3/4 cup sugar (brown sugar preferred)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup coconut milk
- 1 cup ripe mango puree (from about 2 medium mangoes)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Peel and dice the mangoes, then blend them until smooth to make the puree.
- In a large bowl, combine glutinous rice flour, cornstarch, sugar, baking powder, and salt. Mix well.
- Add the coconut milk and mango puree to the dry ingredients and mix until well combined into a smooth dough.
- Scoop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them two inches apart.
- Bake for 10-12 minutes or until lightly golden around the edges. Cool on a wire rack before serving.
