  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 2 bell peppers (mixed colors), diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)

Instructions

  1. Dice the chicken into bite-sized pieces. Heat oil in a large pot over medium heat and add chicken. Season with salt and pepper, cooking until browned (5-7 minutes). Remove from pot.
  2. In the same pot, sauté onions and garlic until softened (3-4 minutes). Add bell peppers and cook for another 3 minutes.
  3. Return chicken to the pot. Stir in diced tomatoes, chicken broth, cumin, chili powder, and mix well.
  4. Bring to a boil then reduce heat to low; cover and simmer for 20-30 minutes.
  5. Taste and adjust seasoning as needed before serving.
