  • 1 cup bell peppers, sliced
  • 1 medium carrot, julienned
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp chili paste (adjust to taste)
  • 1 cup fresh Thai basil leaves

Instructions

  1. Soak the wide rice noodles in hot water for 20-30 minutes until soft but firm.
  2. Heat oil in a large wok or skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the chosen protein to the pan and cook until browned and fully cooked through.
  4. Toss in sliced bell peppers, carrot, and onion; stir-fry until tender yet crisp, about 3-5 minutes.
  5. Add soaked noodles along with soy sauce, oyster sauce, and chili paste. Stir well to combine all ingredients thoroughly.
  6. Fold in fresh basil leaves just before serving. Serve hot.
