Ingredients

Scale
  • 1 lb (450g) salmon fillets, cut into bite-sized pieces
  • 1 can (13.5 oz/400ml) coconut milk
  • 2 tablespoons curry powder
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 cup bell peppers, sliced (or your choice of vegetables)
  • Fresh cilantro for garnish
  • Oil for cooking

Instructions

  1. Prepare all ingredients: chop garlic, ginger, and any vegetables you plan to use. Cut salmon into bite-sized pieces.
  2. In a large skillet over medium heat, add a splash of oil. Once hot, sauté garlic and ginger until fragrant, about 1-2 minutes.
  3. Stir in the curry powder for about 30 seconds.
  4. Gradually pour in the coconut milk while stirring to combine with the spices. Bring to a gentle simmer.
  5. Add the salmon pieces along with soy sauce and palm sugar; cook for 5-7 minutes until salmon is cooked through.
  6. If using vegetables, stir them in during the last few minutes of cooking until tender yet crisp. Finish with lime juice before serving.
