  • 1 cup granulated sugar (for filling)
  • Powdered sugar (for dusting on top)

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, mix flour and 1/2 cup granulated sugar. Cut in softened butter until crumbly. Press evenly into a greased baking pan.
  2. Bake crust for about 20 minutes until lightly golden brown.
  3. In another bowl, whisk together eggs, remaining sugar, lemon juice, and lemon zest until smooth.
  4. Pour the lemon mixture over the baked crust. Return to oven and bake for an additional 20-25 minutes until set.
