  • 1 cup crushed pistachios (unsalted, roasted)
  • 2 cups cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream (full-fat)
  • 2 tsp vanilla extract
  • ½ cup heavy cream (for topping)
  • ¼ cup crushed pistachios (for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. Combine crushed pistachios, melted butter, and sugar in a bowl. Press into the bottom of the prepared pan.
  3. In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla extract until creamy.
