- 4 large eggs (room temperature)

- 1 cup heavy whipping cream (chilled)
- 1/4 cup powdered sugar
- 1 cup cherry filling (or fresh cherries)
Instructions
- Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
- In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, and salt. In another bowl, whisk together eggs and vanilla until frothy. Gradually mix dry ingredients into the wet until just combined.
- Pour batter into the prepared pan and spread evenly. Bake for 12-15 minutes or until a toothpick comes out clean.
- Cool in the pan for five minutes, then invert onto a powdered-sugar-dusted kitchen towel. Carefully roll up the cake with the towel while warm; let cool completely.
- Whip cream with powdered sugar until soft peaks form. Unroll the cooled cake and spread whipped cream evenly over it; add dollops of cherry filling.
- Roll the cake tightly without the towel, wrap in plastic wrap, and refrigerate for at least one hour before slicing.
