  • 2 medium yellow onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onions until golden brown, about 8 minutes. Add minced garlic and grated ginger; cook until fragrant, about 1 minute.
  2. Increase heat to medium-high; add cubed beef chuck roast and season with salt and pepper. Sear until browned on all sides, approximately 5 minutes.
  3. Stir in cumin seeds, coriander powder, turmeric powder, and red chili powder; toast for about 2 minutes before adding crushed tomatoes.
  4. Pour in enough water or beef broth to cover the meat completely. Bring to a boil, then reduce heat to low. Cover and simmer gently for at least 1 hour or until the beef is fork-tender.
  5. Adjust seasoning if necessary; simmer uncovered for an additional 10 minutes for a thicker sauce. Serve garnished with fresh cilantro.
