- 8 oz block of feta cheese
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1 medium onion, chopped
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 4 cups low-sodium vegetable broth
- 1 tsp fresh thyme or basil (or both)
Instructions
- Preheat the oven to 400°F (200°C). Drizzle olive oil in a baking dish and place feta in the center. Surround it with garlic, onion, carrots, and celery.
- Drizzle additional olive oil over the vegetables and feta. Season with salt, pepper, and half of the herbs. Toss gently.
