Ingredients

  • 8 oz block of feta cheese
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups low-sodium vegetable broth
  • 1 tsp fresh thyme or basil (or both)

Instructions

  1. Preheat the oven to 400°F (200°C). Drizzle olive oil in a baking dish and place feta in the center. Surround it with garlic, onion, carrots, and celery.
  2. Drizzle additional olive oil over the vegetables and feta. Season with salt, pepper, and half of the herbs. Toss gently.
  3. Bake for about 30 minutes until feta is soft and golden, and veggies are tender.
  4. Let cool slightly; mash the feta into a creamy consistency. Stir in vegetable broth until smooth.
  5. Transfer to a pot over medium heat, add remaining herbs, and simmer for about 10 minutes.
  6. Serve hot with crusty bread or crackers.
