  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup fresh corn kernels (or 1 can, drained)
  • ½ cup cilantro leaves, chopped
  • Juice of 2 limes
  • ¾ cup Cotija cheese, crumbled
  • ½ medium red onion, diced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, and lime juice. Grill over medium heat for about 6-7 minutes per side until cooked through. Let rest before slicing.
  2. If using fresh corn, grill until charred on all sides. For canned corn, drain well. Allow to cool before adding to the salad.
  3. Dice the red onion and chop the cilantro. Set aside.
  4. In a bowl, combine mayonnaise, sour cream, lime juice, salt, pepper, and chili powder; mix until smooth.
  5. In a large bowl, combine grilled chicken slices, corn kernels, red onion, cilantro, Cotija cheese crumbles, and dressing. Toss gently until evenly coated.
  6. Serve in a bowl or on individual plates; garnish with extra cilantro or cheese if desired.
