  • 1 cup (150g) sweet corn (fresh or frozen)
  • 2 cups (400g) cooked rice
  • 2 tablespoons lime juice
  • ¼ cup (10g) fresh cilantro, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • ½ cup (120g) sour cream (for topping)
  • 1 cup (150g) pico de gallo (for topping)

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet over medium heat, add oil and the diced chicken along with chili powder, cumin, paprika, salt, and pepper. Cook until browned and fully cooked (6-8 minutes).
  3. Stir in sweet corn during the last few minutes of cooking.
  4. Squeeze lime juice over the mixture and mix well.
  5. To assemble, place a scoop of rice in a bowl, top with chicken-corn mixture, pico de gallo, and a dollop of sour cream.
