  • 1 cup ground pork
  • 1 cup plain breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach (chopped)
  • 1 medium carrot (diced)
  • 1 celery stalk (chopped)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, ground pork, breadcrumbs, Parmesan cheese, minced garlic, salt, and pepper until well combined. Shape into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Brown meatballs in batches for 5–7 minutes until golden brown. Remove and set aside.
  3. In the same pot, sauté onions, carrots, and celery for about 5 minutes until tender. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and bring to a simmer. Return meatballs to the pot along with chopped spinach. Season with salt and pepper to taste.
  5. Reduce heat to low and simmer for about 20 minutes until flavors meld together.
