  • 1 cup grated parmesan cheese
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 2 medium carrots, diced
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté diced onion, celery, and carrots until softened (about 5 minutes).
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add chicken breasts and chicken broth; bring to a boil then reduce heat to simmer. Cook until chicken is fully cooked (about 15-20 minutes).
  4. Remove the chicken from the pot and shred it with forks. Return the shredded chicken along with heavy cream and grated parmesan cheese to the pot.
  5. Stir in chopped kale or spinach until wilted; season with salt and pepper to taste.
