  • 2 medium zucchinis (about 300g)
  • 1 tablespoon olive oil (15ml)
  • 1 cup Panko bread crumbs (100g)
  • ¼ cup grated Parmesan cheese (25g)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse and dry the zucchinis. Cut into half-inch rounds or sticks.
  2. In a large bowl, drizzle olive oil over zucchini pieces and toss to coat.
  3. In another bowl, combine Panko bread crumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. Dredge each zucchini piece in this mixture until fully coated.
  4. Preheat air fryer to 400°F (200°C) for 5 minutes.
  5. Place zucchini in a single layer in the air fryer basket without overlapping.
  6. Cook for 10-12 minutes or until golden brown and crispy, shaking the basket halfway through.
